Harina&lt;br /&gt;125gr. Mantequilla&lt;br /&gt;1 Huevo&lt;br /&gt;2 cucharadas de agua&lt;br /&gt;&lt;br /&gt;Trabajar todos los ingredientes sin amasar demasiado.&lt;br /&gt;Envolver la pasta en film y dejar reposar en la nevera un mínimo de media hora.&lt;br /&gt;Estirar con rodillo hasta conseguir una lamina de unos 2mm de grosor. Reservar.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para la crema pastelera:&lt;br /&gt;&lt;br /&gt;500gr. Leche&lt;br /&gt;100gr. Azúcar&lt;br /&gt;piel de 1 Limón&lt;br /&gt;5 yemas de Huevo&lt;br /&gt;40gr. Maicena&lt;br /&gt;un pellizco de Sal&lt;br /&gt;Hervir la leche con el azúcar y la piel de limón (en Thermomix 10 minutos a 90º, velocidad 1) y colar.&lt;br /&gt;Agregar las yemas, la maicena disuelta en un poquito de leche fría y la sal y llevar de nuevo a ebullición (en Thermomix 4 minutos a 90º, velocidad 4). Tiene que quedar espesa.&lt;br /&gt;Dejar enfriar y reservar.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para el glaseado:&lt;br /&gt;&lt;br /&gt;100gr. Agua&lt;br /&gt;100gr. Azúcar&lt;br /&gt;6-7 Moras&lt;br /&gt;&lt;br /&gt;Triturar las moras con el agua y pasar por un colador fino.&lt;br /&gt;Cocer el liquido resultante con el azúcar para hacer un almíbar. Mezclar de forma envolvente.&lt;br /&gt;Extender sobre un silpat o papel de horno y hornear a 180º unos 10 minutos.&lt;br /&gt;Cortar un circulo del diámetro del molde y reservar.&lt;br /&gt;&lt;br /&gt;Preparar un almíbar e impregnar el bizcocho por la cara mas porosa.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para la nata montada:&lt;br /&gt;&lt;br /&gt;1l de Nata para montar&lt;br /&gt;Azúcar&lt;br /&gt;4 hojas de gelatina&lt;br /&gt;&lt;br /&gt;Hidratar la gelatina con agua fría durante 10 minutos.&lt;br /&gt;Montar la nata con azúcar al gusto.&lt;br /&gt;Fundir la gelatina unos segundos en el micro y añadir a la nata montada. Mezclar bien.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para la mousse de chocolate:&lt;br /&gt;&lt;br /&gt;1/2 l Nata para montar&lt;br /&gt;150gr Cobertura de chocolate&lt;br /&gt;2 hojas de gelatina&lt;br /&gt;&lt;br /&gt;Hidratar la gelatina con agua fría durante 10 minutos.&lt;br /&gt;Montar la nata.&lt;br /&gt;Fundir la cobertura de chocolate, añadir la gelatina.&lt;br /&gt;Mezclar el chocolate con la nata montada con cuidado de que no se baje.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Montaje:&lt;br /&gt;&lt;br /&gt;En un molde desmoldable de 30cm de diámetro colocar el disco de bizcocho de chocolate impregnado con el almibar.&lt;br /&gt;Extender la nata montada y alisar. Congelar.&lt;br /&gt;Una vez la nata haya endurecido, sacar del congelador y con la ayuda de una manca pastelera con boquilla rizada aplicar la mousse de chocolate en puntitos hasta cubrir toda la superficie de la tarta. Meter de nuevo en el congelador.&lt;br /&gt;Una vez congelada la mousse de chocolate, sacar del congelador, desmoldar y espolvorear con cacao en polvo. Añadir la harina tamizada y mezclar &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;envolventemente&lt;/span&gt;.&lt;br /&gt;Hornear a 180º durante 10 minutos. Cortar un disco del diámetro del molde.&lt;br /&gt;&lt;br /&gt;Para la &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Mousse&lt;/span&gt; de Chocolate a la Naranja:&lt;br /&gt;&lt;br /&gt;500&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;ml&lt;/span&gt; Nata&lt;br /&gt;150&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;gr&lt;/span&gt; Cobertura de chocolate&lt;br /&gt;2 hojas de Gelatina&lt;br /&gt;40&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;gr&lt;/span&gt; Azúcar&lt;br /&gt;1 clara de Huevo&lt;br /&gt;Ralladura de una Naranja&lt;br /&gt;&lt;br /&gt;Montar la nata y cuando este casi montada añadir la ralladura de naranja y seguir montando.&lt;br /&gt;Fundir la cobertura y añadirle la gelatina previamente hidratada. Mezclar con la nata montada.&lt;br /&gt;Montar la clara a punto de nieve con el azúcar y añadir a la mezcla anterior con mucho cuidado para que no baje.&lt;br /&gt;Reservar en la nevera.&lt;br /&gt;&lt;br /&gt;Para el almíbar de naranja:&lt;br /&gt;&lt;br /&gt;100&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;ml&lt;/span&gt; Agua&lt;br /&gt;40&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;gr&lt;/span&gt; Azúcar&lt;br /&gt;Zumo de una naranja&lt;br /&gt;&lt;br /&gt;Llevar a ebullición el agua con el azúcar. Cuando este frió añadir el zumo de naranja.&lt;br /&gt;Reservar en la nevera.&lt;br /&gt;&lt;br /&gt;Para el glaseado de chocolate:&lt;br /&gt;&lt;br /&gt;100&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;ml&lt;/span&gt; Agua Mineral&lt;br /&gt;125&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_10"&gt;gr&lt;/span&gt; Azúcar&lt;br /&gt;20&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;gr&lt;/span&gt; Leche en polvo&lt;br /&gt;30&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_12"&gt;gr&lt;/span&gt; Cacao en polvo&lt;br /&gt;100&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_13"&gt;ml&lt;/span&gt; Nata&lt;br /&gt;2 hojas de Gelatina&lt;br /&gt;&lt;br /&gt;Cocer el agua con la nata y la leche en polvo. Cuando este caliente añadir el azúcar mezclado con el cacao.&lt;br /&gt;Cocer a fuego lento hasta los 102ºC. Dejar que baje a 60ºC y añadir la gelatina hidratada.&lt;br /&gt;Dejar que se acabe de enfriar y reservar.&lt;br /&gt;&lt;br /&gt;Montaje:&lt;br /&gt;&lt;br /&gt;Colocar la plancha de bizcocho sobre un molde &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_14"&gt;desmoldable&lt;/span&gt; y empapar con el almíbar de naranja.&lt;br /&gt;Llenar el molde con la &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_15"&gt;Mousse&lt;/span&gt; y alisar. Añadir la harina tamizada y mezclar envolventemente.&lt;br /&gt;Hornear a 180º durante 10 minutos. Cortar discos del diámetro de los moldes que vayamos a utilizar.&lt;br /&gt;&lt;br /&gt;Para la Mousse de Queso fresco:&lt;br /&gt;&lt;br /&gt;1/2 l. Nata para montar&lt;br /&gt;500gr. Queso fresco tipo quark&lt;br /&gt;2 hojas de gelatina&lt;br /&gt;2 clara de huevo&lt;br /&gt;60gr azúcar&lt;br /&gt;&lt;br /&gt;Montar la nata con 40gr de azúcar. Fundir la gelatina hidratada en el micro y añadirla a la nata mientras la montamos.&lt;br /&gt;Montar claras a punto de nieve con los 20gr de azúcar restantes.&lt;br /&gt;Añadir el Quark a la nata mezclando con cuidado y por ultimo la clara montada muy suavemente para que no se baje.&lt;br /&gt;&lt;br /&gt;Para los núcleos de fresas del bosque:&lt;br /&gt;&lt;br /&gt;1 Terrina de Fresitas del Bosque&lt;br /&gt;&lt;br /&gt;Triturar las fresas hasta que quede un puré fino. Congelar en cubitos de tamaño mas pequeños que los moldes que vayamos a utilizar.&lt;br /&gt;Reservar algunas fresas para decorar.&lt;br /&gt;&lt;br /&gt;Para el almíbar de ron:&lt;br /&gt;&lt;br /&gt;100ml agua&lt;br /&gt;40gr azúcar&lt;br /&gt;15ml ron&lt;br /&gt;&lt;br /&gt;Calentar en un cazo el agua con el azúcar y llevar a ebullición. Cuando se enfrie añadir el ron y reservar en la nevera.&lt;br /&gt;&lt;br /&gt;Otros:&lt;br /&gt;&lt;br /&gt;Gelatina neuta.&lt;br /&gt;&lt;br /&gt;Montaje:&lt;br /&gt;&lt;br /&gt;Llenar los moldes con la mousse hasta la mitad. Introducir los núcleos de fresa congelados y acabar de rellenar con la mousse restante. Finalmente colocar un disco de base impregnado con almíbar de ron por la cara mas porosa. Añadir la harina tamizada y mezclar envolventemente.&lt;br /&gt;Hornear a 180º durante 10 minutos. cortar discos del tamaño del molde deseado, 2 por cada tarta.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para la Mousse:&lt;br /&gt;&lt;br /&gt;1/2 l. Nata para montar&lt;br /&gt;1,5 hojas de gelatina&lt;br /&gt;1 clara de huevo&lt;br /&gt;2 cucharadas de azúcar&lt;br /&gt;10 fresones maduros&lt;br /&gt;&lt;br /&gt;Montar la nata con una cucharada de azúcar. Fundir la gelatina hidratada en el micro y añadirla a la nata mientras la montamos.&lt;br /&gt;Montar clara a punto de nieve con la otra cucharada de azúcar.&lt;br /&gt;Cortar las fresas en daditos pequeños.&lt;br /&gt;Añadir las fresas a la nata mezclando con cuidado y por ultimo la clara montada muy suavemente para que no se baje.&lt;br /&gt;&lt;br /&gt;Otros:&lt;br /&gt;&lt;br /&gt;Hacer un almíbar con 1/4l. de agua y 100gr de azúcar, cuando enfrié añadir el zumo de una lima.&lt;br /&gt;Diluir 1/2 hoja de gelatina hidratada en 100ml. de sirope de grosella.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Montaje:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Disponer un disco de base en el molde deseado. Empaparlo con almíbar de lima. Poner una capa de mousse de fresas con nata. Otro bizcocho empapado y otra capa de mousse. Cubrir con un poco de "glaseado" de grosella y decorar al gusto. Harina&lt;br /&gt;125gr. Mantequilla&lt;br /&gt;1 Huevo&lt;br /&gt;2 cucharadas de agua&lt;br /&gt;&lt;br /&gt;Trabajar todos los ingredientes sin amasar demasiado.&lt;br /&gt;Envolver la pasta en film y dejar reposar en la nevera un mínimo de media hora.&lt;br /&gt;Estirar con rodillo hasta conseguir una lamina de unos 2mm de grosor. Reservar.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para las manzanas&lt;br /&gt;&lt;br /&gt;5 Manzanas Golden&lt;br /&gt;125gr. Mantequilla&lt;br /&gt;75gr. Azúcar&lt;br /&gt;Canela en polvo&lt;br /&gt;Nata liquida&lt;br /&gt;&lt;br /&gt;En una sartén, derretir la mantequilla con el azúcar y añadir las manzanas peladas, descorazonadas y cortadas en octavos.
